Wet ingredients
3 ripe bananas
1c cane sugar
2 eggs
1/3 c olive oil
1/3c buttermilk
1/3c Salted Caramel Whiskey
2 tbls bourbon vanilla extract
Dry ingredients
2 c AP flour 1
tsp baking soda
1 tsp pink Himalayan salt
1 1/2c dark chocolate baking chunks
1/2c unsalted cashews
Rough chop the dark chocolate baking chunks and cashews. Don’t chop them too fine, you want larger pieces in the bread. Place the chopped pieces into a separate bowl and set aside. Place all the wet ingredients into a large mixing bowl and mix together. Add your dry ingredients into the same bowl and mix until just combined. Gently fold in the chocolate chips and cashews, saving 3 tbls to sprinkle on top of the bread loaves. Split the batter between two lightly oiled loaf pans. Evenly sprinkle the reserved dark chocolate and cashew bits on the tops of the loaves. Bake 350 for 50 minutes or until a toothpick inserted in the center comes out clean. Makes two loaves.
