Wet ingredients 

1c cane sugar

1c olive oil

2c pumpkin puree

¾ Greek yogurt

3tsp pumpkin pie spice 

4 eggs

2 tbls bourbon vanilla extract 

Dry ingredients   

3 c AP flour 

2 Tsp baking soda   

1 Tsp pink Himalayan salt        

Place all the wet ingredients into a large mixing bowl and mix together. Add your dry ingredients into the same bowl and mix until just combined. Split the batter between two lightly oiled loaf pans. Bake 375 for 45 minutes or until a toothpick inserted in the center comes out clean. Makes two loaves.
