Wet ingredients 

1c shredded carrots 

1/3c rehydrated raisins  

3/4c cane sugar     

3/4c brown sugar  

2 eggs   

3/4c buttermilk or whey    

 1/2c olive oil    

1c sourdough discard 

1tbls vanilla Zest and juice of 1 orange  

    Dry ingredients   

3 c AP flour  

1 1/2 tsp baking soda  

1tsp baking powder  

2tsp cinnamon 

1tsp nutmeg 

1 tsp pink Himalayan salt  

1c chopped pecans   

Place raisins into a bowl and add 1/3c of hot water. Allow to sit for 10 minutes to rehydrate the raisins. Place all the wet ingredients into a large mixing bowl and mix together. Add your dry ingredients into the same bowl and mix until just combined. Split the batter between two lightly oiled loaf pans. Bake 350 for 55 minutes or until a toothpick inserted in the center comes out clean.
