Cherry Spice cookies
Makes 3 dozen 2” cookies . 2 sticks butter softened 1 cup brown sugar 1 cup granulated sugar 2 eggs 1 cup mashed cherries strained (cook down and mash, reserve the juice) 2 tsp vanilla 1 1/2 tsp pumpkin pie spice 1 1/2 tsp baking powder 1/2 tsp salt 3 cups AP flour . Glaze 3 cups powdered sugar 5 Tbls reserved cherry juice Combine in a small bowl to make the glaze for the cookies.
Cook down cherries (fresh or frozen. Please put them first.) and mash them when they become soft. You just want a rough mash, so you still have larger pieces. Strain them and reserve the juice. . Pre-heat oven to 325. In the bowl of a stand mixer cream butter and sugar. While this is creaming one a separate bowl combine flour, salt and baking powder. Once light and fluffy add Pumpkin pie spice and vanilla. After those have incorporated beat in eggs one at a time. . Alternate adding 1 cup of flour then 1/3 cup of cherries to the butter mixture until you have all of the remaining ingredients incorporated. . Bake on a parchment or silpat lined cookie sheet for 18-20 minutes or just until the cookies start to become golden. Move to a cooling rack once baked and allow them to cool before glazing.
