Pumpkin Butter 8 cups pumpkin purée 1/4 cup apple cider vinegar 1 1/2 cups granulated sugar 1 1/2 cups brown sugar 4 tsp vanilla 3 Tbls pumpkin pie spice . Mix all ingredients in a large pot on the stove. Slow cook on low heat for 3 hours until thick and bubbly. Ladle into 5 pint size canning jars. . This is so good as a dip for apples or on any bread. Swirl some into banana bread or cheese cake. It also makes perfect gifts for neighbors and friends. .
