Wet ingredients 

1c cane sugar  

1c whole milk  

1/2c olive oil 

2 eggs 

Zest of 1 lemon 

1c ricotta 

2tbls vanilla 

1tbls lemon ext 

2c blueberries, fresh or frozen 

   Dry ingredients

3c ap flour

1tsp baking soda 

1tsp baking powder 

½ tsp pink Himalayan sal

 Place all the wet ingredients except for the blueberries into a large mixing bowl and mix together. Add your dry ingredients into the same bowl and mix until just combined. Flod in your blueberries. Split the batter between two lightly oiled loaf pans. Bake 350 for 55 minutes or until a toothpick inserted in the center comes out clean. Makes two loaves.
